RAW VEGAN CHOCOLATE CUPCAKES
These are probably the best cupcakes I have ever made. Not only are they super easy to make, but they also don’t contain refined sugar. Indeed, all the ingredients are very beneficial for your body. All you need is approximately half an hour and a little bit of motivation.
You’ll need:
Cupcakes:
- 1 cup oats
- 1 cup dates
- 2 tbsp cacao powder
- 1/3 almonds
Filling:
- 1 cup cashews
- 1/3 cup water
- 2 tbsp agave syrup
- 1 teaspoon vanilla extract
Chocolate frosting:
- 2 tablespoon coconut oil
- 1 tablespoon cacao powder
- 1/2 cup coconut milk
- 1 tablespoon agave syrup
To make the cupcakes:
- Pulse the oats in a food processor until they become a flour.
- Add the rest of the ingredients and process until all sticks together.
- Press into cupcakes tins and make a whole in the middle for the frosting. Put in the fridge.
- To make the frosting blend all of the ingredients until very smooth. Use it to fill the cupcakes. Put back to the fridge.
- For the chocolate frosting again mix all the ingredients and than put in on the top of the cupcakes.
- Garnish with chopped chocolate. Let is sit in the fridge for at least an hour.
